But launching the first high energy Japanese dining experience in Switzerland is by no means an easy task, and one man was up for the challenge – Chef Frederick Faucheux. But who is he? How did he curate his menu to ensure The Penthouse will be acclaimed one of the best restaurants in Zurich? How has he reinvented the Japanese dining scene?

Frederick Faucheux has been passionate about cooking and culinary expertise since an early age, and once his own gastronomic excellence developed he landed a incredible role, now more than a decade ago, as Executive Sous Chef at Nobu in South Africa, a position he flourished at and played an imperative role in winning 9th place for overall restaurant in SA at the Eat Out awards.
It was here that his passion for Japanese food accelerated, and with his French background he was keen to combine his heritage with his practice, an marry both cuisines together in a perfect fusion of flavours.
It was from here that he took the jump to Singapore itself, securing his position as Executive Chef of CÉ LA VI and was nominated Executive Chef of the Year at the World Summit awards of Excellence in 2015. His successes were aplenty including being selected to represent Singapore in Alain Ducasse’s global Gout de France event, whereby he could really showcase his talents.
But how did he get from Singapore to opening one of the best restaurants in Zurich?
From there he secured multiple positions as Executive Chef in famous Japanese fusion restaurants such as Maze Mayfair in London, La Gare for Gaston Accurio in Paris and then of course, as Chef de Cuisine at The Penthouse restaurant at FIVE Palm Jumeirah in Dubai.
Bringing his worldly experience and culinary passions to FIVE Hotels & Resorts, it was only the perfect fit for him to launch what is now a contestant for the best restaurants in Zurich, if not Switzerland, The Penthouse Zurich.
